Even if the vinification took place immediately after the grapes were harvested, I thought it appropriate to make another post to show you in detail all the steps necessary for the preparation of the sparkling wine base. As you can see from the video and images, the freshly harvested grapes were loaded directly with whole bunches into the automatic press exerting a soft pressing. After that, the first ¾ of the pressing was placed in oak barriques to begin the alcoholic fermentation, while the final part of the pressing was discarded. At this point, once fermentation is complete, it will be our concern to pour the new Trebbiano Spoletino wine into steel containers and wait for the following spring (when temperatures rise) to be able to proceed with bottling and inserting the liquer de tirage.
